Meal ideas & what I’ve been eating in the last 2 months.
We all get tired of meal planning and finding something to cook every. single. day. And then we worry about whether or not it’s healthy or are we getting enough vegetables and fiber in our diet. It can add a lot of stress into our week.
So, to change it up from my usual single recipe cooking adventures, I thought I would compile a big list of some of the things I have been cooking in the last 2 months to give you all some new meal ideas. And, if you are particularly interested in any of the meals, I would be happy to do dedicated posts with recipes.
I have been trying to change it up from my usual recipes and try out some new ideas that weren’t too complicated to make on a busy work night. It can get boring eating the same things all the time and sometimes even small changes can make cooking and eating a little more exciting.
Here is what I’ve been eating lately:
Slow Cooker Barbecue Ribs – we made these for my Birthday and they turned out amazing! Delicious and easy.
French Onion Soup with Baguette Cheese Melts – I had never made French Onion Soup before but was pleasantly surprised with how it turned out.
Baked Sweet Potatoes Topped with Black Bean Topping – A twist on a classic baked potato, I was skeptical about this combination at first glance but it was actually really tasty and loaded with nutrition.
Barbecue Chicken Wraps – A simple easy dinner that was so satisfying, what is it about wraps that are just so good?
Loaded Vegetable Lentil Quinoa Soup – Hearty, warm and nutritious and perfect for cold weather.
Creamy Chicken Red Pepper Pasta – I’ve been making this one for years but hadn’t made it recently, a comforting simple dinner.
Balsamic Chicken with Roasted Sweet Potatoes and Brussel Sprouts – Felt fancy but was so easy to make.
Ginger Beef and Green Pepper Stir Fry – I realized that we hadn’t stir fry in a really long time, so I made one.
Bocconcini Basil Balsamic Salad with Mini Baguette Grilled Cheese – When my husband is away I always make a salad dinner because he doesn’t eat salad. I was extremely happy with this little dinner.
Classic Loaded Baked Potatoes – Nothing fancy but oh so good. A quick hearty meal for a busy weekday.
