What I’ve been eating end of summer edition!
A bunch of you really enjoyed my last “What I’ve Been Eating Lately” blog so, I thought it would be fun to do another one. I think people really enjoy these lists because it helps us all have meal ideas for the endless meal planning and prepping week in week out. So, this is what I have been eating in the past little while – end of summer edition. If you want to check out the previous post, you can find it here.
Lemon & Dill Salmon, Haddock, Steamed Broccoli and Garlic Butter Spaghetti Noodles
Simple, quick, light and tasty. A staple combination in our house.

Summer Veggie Sauteed Penne Pasta with Crumbled Goat Cheese
I love this particular kind of pasta especially in the summer when I want lighter meals. Nutritious and fresh, a great dinner.

Baked Sweet Potato, Steamed Green Beans and Balsamic Baked Chicken Breast
I shared a similar meal idea last time but couldn’t help but share it again, such a yummy combination of flavors and quick to make on busy nights.

Beef Burger with Bacon, Sauteed Mushrooms and Goat Cheese
Had an Apricot Wheat Ale with this one from St-Ambroise which is a brewery in Quebec, Canada which was awesome. Such an incredibly delicious summer meal, if you haven’t tried goat cheese on burgers you’re missing out!

Greek Inspired Grilled Pork Tenderloin and Quinoa Bowl
This is a variation of a recipe I have shared here before. It’s just so darn good. If you would like the recipe you can read the original post, just swap Pork Tenderloin for the meat.

Chicken Fajitas
Tex-mex recipes are some of my absolute favourites, I’m pretty much always craving it. And these chicken fajitas did not disappoint.
